BBQ Meatballs and Bus Rides

Last night I made the most delicious meatballs from scratch following the recipe of one Ree Drummond also known as the Pioneer Woman. My boyfriend says I'm obsessed with her, and I think he's right. If you haven't seen her blog yet be sure to check it out! She also has her own cookbook, and her recipes look scrumptious and are really simple.

Anyway, these meatballs were to die for! I must admit that I cheated a little bit on the sauce (instead of making mine from scratch, I used half ketchup and half BBQ sauce), but they turned out just marvelous, even if they had to bake for 45 minutes. Here's the recipe- I urge you to try it, you probably have all these ingredients in your pantry.

Ingredients
FOR MEATBALLS
1-1/2 pound Ground Beef
3/4 cups Oats
1 cup Milk
3 Tablespoons Very Finely Minced Onion
1-1/2 teaspoon Salt
Plenty Of Ground Black Pepper, to taste

FOR COOKING MEATBALLS
1 cup All-Purpose Flour (coating For Frozen Meatballs)
Canola Oil

FOR SAUCE
1 cup Ketchup
2 Tablespoons Sugar
3 Tablespoons Vinegar
2 Tablespoons Worcestershire
4 Tablespoons (to 6 Tablespoons) Onion
1 dash Tabasco
Preparation Instructions
Preheat oven to 350 degrees.
Combine all meatball ingredients. Roll into medium-small balls and place on a cookie sheet. Place sheet in freezer for five minutes.
After 5 minutes, remove meatballs from freezer and immediately dredge in unseasoned flour.
Brown meatballs in canola oil until just brown. Place into a baking dish.
Combine all sauce ingredients. Pour over meatballs and bake at 350 degrees for 45 minutes. Serve with egg noodles, mashed potatoes, or crusty French bread.

On a completely unrelated note, my boyfriend and I have also been using the bus quite a bit lately because the car is in the shop. Luckily the Corvallis Transit System is really nice and user friendly and there are plenty of stops in our area. We went to the bank, the library (which is the busiest library I've seen in a while), and the bookstore to drop of my application (sadly they aren't hiring) and it all became such a nice little outing rather than a bunch of errands.
